Let's move to North America to taste a Mexican recipe with a strong and particular taste. We are talking about the typical product known as huevos rancheros. It is a dish made with sauce and eggs which, in Italy, is served as a mid-morning breakfast , especially on farms. We, however, can serve it as a delicious second course, given how consistent it is.

To compose it, we start with a base of tortillas , to be covered with a particular tomato sauce , made spicy by the addition of chili pepper and known as ranchero sauce . Finally, it is completed with the addition of fried or poached eggs . In short, this dish alone could constitute an entire lunch, although it was eaten for breakfast on Mexican farms.

How to prepare the huevos rancheros recipe

  1. To begin, peel the onion and cut it finely. Wash and chop the chilli pepper .
  2. Wash the pepper , cut it into two halves and remove the stem. Clean the inside, removing all the seeds and cut the pulp into cubes.
  3. In a pan, pour 2 tablespoons of oil and add the onion and chilli. Turn on a low heat and let it simmer. After two minutes, add the pieces of pepper and brown.
  4. Add the peeled tomatoes, season with salt and pepper and cook the sauce for 10 minutes .
  5. Take a non-stick pan and put a knob of butter. After melting it on the heat, add the tortillas and heat them for 30 seconds on each side.
  6. In another pan, pour two tablespoons of oil and shell the eggs , fry them until the white has thickened. The red should usually be kept creamy but if you don't like it you can continue cooking.
  7. Take the plates and place a tortilla. On them, pour a generous amount of tomato sauce and place a fried egg on each. Complete with chopped parsley, even better with coriander .

Mexican eggs were born as a simple dish but over time they have become a real institution, crossing national borders and also arriving in the United States, mainly in nearby New Mexico . So the dish has gradually changed, enriched with other ingredients such as guacamole , frijoles refritos or pico de gallo sauce .
