Hummus without garlic and tahini is a lighter variant of the classic Lebanese chickpea sauce: a quick and easy to prepare gluten-free recipe.

Ideal for an aperitif and excellent served with a few slices of toasted bread, hummus is a really simple sauce to prepare and with a guaranteed result. Today we are going to make a variant of hummus without garlic and tahini: the classic toasted sesame seed sauce has an oriental flavor and a hint of bitterness, which not everyone likes. The result will be a hummus with a lighter version , naturally also perfect for those following a gluten-free diet.

Preparation of chickpea hummus without garlic and tahini

  1. Start by rinsing the canned chickpeas from their preserving liquid, then place them in a bowl.
  2. Add the lemon juice, salt and pepper and start blending, adding a little oil and some cold water (if you need to obtain an even creamier consistency). Tip: don't overdo it with the water, if it isn't too creamy, add more lemon or oil.
  3. Serve in a small bowl, adding some paprika for decoration and a drizzle of oil.

This is the basic hummus recipe without tahini sauce and without garlic, however to make the taste more oriental you can also add cumin powder , curry and/or chilli pepper to your taste. Finally, to decorate, add chopped fresh parsley or coriander to taste.

A tip, if you love the classic recipe and want to get closer, without using tahini and garlic, try adding a little toasted sesame seeds (however you will have to use a very powerful mixer to be able to crush them).

Hummus without tahini and garlic can also be prepared with the Thermomix.

  1. To do this, place the chickpeas in the bowl and add all the other ingredients, blending for about 30 seconds at speed 8.
  2. Once done, stir with a ladle to see if the ingredients are well mixed together, then blend again at speed 5 for about 3 minutes and, if necessary, add cold water.

storage

This sauce can be stored in the fridge in an airtight container for about 1 week (cover it with a drizzle of oil to improve preservation). Alternatively you can also freeze it for about 2 months.

What is tahini

Tahini or tahini is a sauce obtained from white sesame seeds, initially widespread in Cyprus, Greece, Turkey, North Africa and the Near East, but today famous throughout the world . It is also called sesame butter or sesame cream.

The sesame seeds are gently toasted to prevent them from becoming bitter (we have to be honest with you, it is inevitable to taste a bitter note in this sauce, you have to like it). Subsequently, they are ground and the resulting flour is mixed with sesame oil to form a paste with a consistency similar to peanut butter.
