Ice cream Malaga


What do raisins, rum and ice cream tell you? To us, incurable nostalgics, they remind us of the legendary Malaga ice cream. Here's the recipe!

Let's take a step back in time and let ourselves be pampered by an ice cream that tastes of the 70s and 80s: Malaga flavored ice cream. Do you remember how good it was with the raisins, the hint of rum and the cream ice cream base ? Who knows what happened to it… Precisely because it has become unobtainable in ice cream shops, we thought we'd try our hand at this recipe that's easy to prepare even without an ice cream maker .

How to prepare Malaga ice cream

  1. Break the eggs and separate the white from the yolk . In fact, you will only need the latter.
  2. Place them in a bowl, add the sugar and dextrose and mix them with an electric whisk until they are light and fluffy.
  3. In a saucepan, heat the milk and cream to 85°C.
  4. With the whisk in action, pour them over the egg yolks then put everything back in the pan and bring back to 85°C and keep it for 2-3 minutes. This step serves to pasteurize the eggs and make them safe to consume.
  5. Transfer the mixture into a bowl and then into the refrigerator for at least 6 hours. The ideal would be all night because in this phase, called maturation , all the ingredients have the opportunity to hydrate and the risk of crystal formation during the creaming phase is reduced.
  6. Just before completing the preparation of the ice cream, soak the raisins in rum for at least an hour or until they are completely rehydrated.
  7. Add it to the cream, pour everything into a low, wide container and place in the freezer for 4 hours, stirring every half hour or so. Your ice cream is ready to be enjoyed.

Malaga ice cream with ice cream maker

If you wish to prepare Malaga ice cream with an ice cream maker then pour the very cold liquid into the refrigerated container and mix for 30 minutes. Halfway add the soaked and squeezed raisins. In this recipe, alcohol is essential not only to flavor the ice cream but also to prevent the raisins from freezing.

You can also preparecream ice cream following our recipe and then add soaked raisins if you can't find dextrose or prefer not to use it.

Conservation

Malaga ice cream can be stored in the freezer for up to 3 months . Keep in mind that it will tend to compact so it's best to bring it back to room temperature for at least 30 minutes before serving.

Origin and history of Malaga ice cream

This Amarcord flavored ice cream makes you dream but what is its origin? As is easy to guess from the name, he was born in Andalusia , near the city of Malaga but it is not easy to establish precisely when. In addition to the city, the ingredients that distinguish it give the ice cream its name.

In fact, Malaga ice cream was originally prepared by enriching the more classic cream ice cream with Malaga raisins and Malaga wine , two local products that are difficult to find today if it weren't for a few enthusiasts.

Over time, the sweet and fortified Malaga wine was replaced by rum or Marsala and the grapes replaced with the more classic sultana, thus giving life to the flavor of ice cream as we know it today.
