La parigina is a rustic Neapolitan pizza made up of a pizza dough base , a filling of tomato , provolone and ham and a last layer of puff pastry topping. How to prepare the Parisian recipe
- To prepare the Neapolitan parisina, start with the basic pizza dough . Gather the flour in a bowl then pour in the lukewarm water in which you have dissolved the yeast and sugar. Start kneading and when it begins to take shape, add oil and salt.
- Finish working on the pastry board until it is smooth and homogeneous then put it to rise in the oven off with the light on until doubled. It will take about 2-3 hours.
- Then transfer it to a pan of about 25 × 30 cm lined with parchment paper and spread it well with your hands.
- Spread a layer of tomato puree, season with salt then spread the provolone and sliced ham.
- Cover with the puff pastry (if it is not big enough, roll it out with a rolling pin), pressing lightly along the edges, as if to tuck it up.
- Bake the Parisian focaccia at 200 ° C for about 30 minutes , then let it cool before serving.
