First, peel the potatoes and cut them into thin slices with the help of a mandolin. The ideal thickness is a couple of millimeters . As they are ready, add them to a bowl filled with water .

Then bring a pan full of water to the boil and immerse the potatoes in it for a couple of minutes .

Separately, beat the eggs with the milk , parmesan , a pinch of salt and pepper . Then add the well-drained potatoes and mix gently to distribute the eggs.

Pour everything into a 22cm diameter baking pan lined with baking paper and cook at 180°C for 40 minutes . Let this tasty savory cake cool before serving.
