Have you ever heard of Kaiserschmarren: let's cook this traditional egg-based dessert that is very reminiscent of crepes!

Today we are cooking a dessert of Austrian origin, but which is in all respects a Tyrolean recipe very present in Trentino-Alto Adige: the emperor's dessert, Kaiserschmarren, also known as Kaiserschmarrn, an original recipe that you will love very much !

If you are trying to repeat the name by heart but still struggle with the pronunciation, don't worry: the preparation is much, much easier ! Its egg-based dough is very reminiscent of crepes, but its appearance is slightly more rustic and scrambled and the ingredients are richer: in fact we find rum and raisins, which add even more flavor to the mixture.

How to prepare the Kaiserschmarrn recipe

  1. In a bowl, separate the egg whites from the yolks and mix the latter with the vanilla bean seeds, the flour and the sugar , which you will have to add gradually as you continue to whip.
  2. When the mixture is nice and frothy, add the milk and rum , continuing to mix everything.
  3. Whip the egg whites until stiff and add the two mixtures, mixing from bottom to top so as not to dismantle them.
  4. In a non-stick pan, cook the dough over a low heat, using a knob of butter . Once firmed, with the help of a spatula, cut the sweet omelette into four and turn one piece at a time, continuing cooking on the other side.
  5. Now you can decide whether to serve it in slices or whether to give the dish an even more rustic look by dividing it into many parts. A sprinkling of icing sugar … and you're done!

Variants

There are several ways to prepare the emperor's omelette. There are those who leave the eggs whole for example, while those who add raisins (50 grams will be enough) soaked in rum for 30 minutes. Good in its purity, just with a sprinkling of icing sugar, it is simple to transform into a sumptuous breakfast by accompanying it as tradition dictates with blackcurrant or blueberry jam or even with apple sauce .

You can keep this quick and easy dessert for a maximum of 1 day , in an airtight container and placed in the refrigerator.

The history of the Kaiserschmarren

This preparation has an interesting history behind it. It is believed that this dish belongs to the peasant tradition because the ingredients used were those typical of the peasants of the past, such as eggs and butter.

Over the years, the dessert became part of the culinary tradition until it reached the emperor's court. But how? Legend has it that this sweet Tyrolean omelette was to be served to Emperor Franz Joseph of Austria in the form of crêpes. During preparation, however, the court cook got distracted by burning it. In an attempt to turn it he also made the mistake of breaking it.

However, he didn't give up: he added a sprinkling of icing sugar to cover the burnt parts and instead of putting the jam inside, he served it aside . The emperor complimented the chef thinking that he wanted to surprise him with something new and thus the emperor's ( kaiser ) sweet omelette ( Schmarr(e)n ) was born.
