What is pizza kissed and how is it prepared, the preparation and cooking method so loved by Gabriele Bonci.

More than a real recipe, pizza kissed is a cooking method, which involves the preparation of two pizzas (Roman or Neapolitan depending on the region that tells you its origin) which are cooked one on top of the other , and then be filled with lots of fresh products , preferably local and of high quality. Surely you have already seen her around, and especially on television! In fact, Gabriele Bonci loves this preparation, bringing it not only to his oven but also to the small screen during many cooking programs that he has directed or been a guest on.

Preparation of kissed pizza

  1. Take a bowl and dissolve the brewer's yeast in it with a part of the water.
  2. When it has dissolved, add the flour and mix until all the water has been incorporated.
  3. Add the second part of water with the salt and continue kneading until you obtain a very elastic dough.
  4. Add a generous drizzle of oil and knead again to incorporate.
  5. Now take the dough and make the folds , this 3-4 times at a distance of 15-20 minutes .
  6. Then place it in an oiled bowl, cover it with a cloth and let the volume double (it will take a few hours).
  7. Once doubled , divide it into two smaller doughs which you will have to roll on the work surface to close them perfectly.
  8. Leave the dough to rise again, it's fine on the work surface, as long as they are covered with a clean cloth .
  9. When they double, take them and let's move on to the drafting.
  10. Roll out the dough on a well-floured work surface using your fingertips to distribute the air well (a bit like a Roman pinsa).
  11. Place a first loaf of bread on a lightly oiled rectangular baking tray and roll it out with your fingers until it covers the entire tray and finish with a generous drizzle of oil on the surface.
  12. Start spreading the second dough on the work surface, then place it delicately on top of the first dough and spread it with your hands so that the edges overlap perfectly.
  13. Close with a second drizzle of oil and move on to cooking.
  14. Bake the pizza in a preheated, static oven at 250°C for about 12-15 minutes , then remove from the oven and fill as you prefer.

How to fill it: useful ideas and advice

There are so many fillings, just look online to be inspired, or even do some tests (from the most classic to the most alternative). Today, for example, we decided to stuff the kissed pizza with fresh stracciatella and mortadella , all cold by separating the two pizzas and stuffing the inside.

However, you can also decide to use ingredients that need short cooking , I'm thinking of tomato puree and mozzarella (if we want it stringy). For this reason we recommend that you remove the square from the oven a few minutes before , fill it and then complete cooking.
