Directly from western Liguria comes the recipe for brandacujun, a cod creamed with potatoes with an intense flavor and creamy consistency.

The name doesn't suggest anything good and yet brandacujun is nothing more than creamed stockfish. It is a typical product of western Liguria prepared with desalted cod , potatoes and aromas such as parsley, lemon juice and garlic. This traditional Ligurian dish was born on sailors' boats where potatoes and fish were never missing.

The meaning of brandacujun comes from the gesture of brandishing , i.e. rotating the pan to mix all the ingredients and thus obtain the characteristic consistency. As regards the second part of the name, the translation of which is not difficult to understand, it alludes to the fact that this operation was carried out by the least intelligent sailor on the ship, as it was a rather simple calculation.

How to prepare brandacujun original recipe

  1. First, cut the cod into small pieces, leaving the skin on. Place it in a large pot, cover with cold water and bring to the boil.
  2. At this point, add the peeled and chopped potatoes and continue cooking until they are tender.
  3. Drain all the ingredients, removing the skin and any bones from the fish and tearing it up with your hands.
  4. Chop the cored garlic and the parsley, then brown it with a drizzle of oil in a high-sided pan.
  5. Add the shredded stockfish and the lightly mashed potatoes.
  6. Add about half a glass of extra virgin olive oil and lower the heat, covering everything with a lid.
  7. Continue cooking, shaking the pan so that the contents become almost creamy (this is called brandishing ).
  8. At the end of cooking, flavor with lemon zest and juice, season with salt and pepper, add the Taggiasca olives and bring to the table.

storage

Brandacujun cod can be stored in the refrigerator well covered in cling film for 2-3 days. We recommend consuming it at room temperature.
