Let’s prepare the Genoese cundigiun, a typical Ligurian salad
Condiglione is a typical Ligurian salad prepared with various ingredients: tomatoes, onions, peppers but also hard-boiled eggs, anchovies and much more.
Condiglione, cundigiun in Ligurian dialect, is a sort of salad prepared with many of the ingredients found in summer gardens. It was born as a peasant dish and as such it is difficult to identify a single recipe: the ingredients in fact vary from area to area and from family to family. After all, we are still talking about a salad.
Looking at the preparation being more similar to the original Genoese recipe , onions, tomatoes, peppers and rigorously Taggiasca olives cannot be missing, just like the oil. You can then add anchovies, green beans, capers, tuna and boiled eggs to make it an even more substantial dish.
How to prepare the condiglione recipe
- First, boil the eggs starting from cold water and calculating 8 minutes from the time they boil.
- Also peel the potatoes , cut them into chunks of a couple of centimeters and cook them in boiling salted water for 15 minutes. After 5 minutes of cooking, add the green beans without the ends .
- Then distribute all the ingredients in a large salad bowl : the tomato and pepper cut into pieces, the cucumbers peeled and cut into slices, but above all the Taggiasca olives, capers, anchovies and basil, the ingredients that most of all characterize this typical product.
- Add the eggs, peeled and cut into chunks, the potatoes and green beans and season everything with oil, oregano and salt.

storage
You can store the unseasoned salad in the refrigerator for a couple of days , closed in an airtight container.
