We know what you're thinking: if light biscuits are without eggs, butter and milk… then what's in them? They can't be good! However, once you have tried it, you will be forced to think again because our recipe for light biscuits is truly delicious. To get the right combination of ingredients, which is essential when working with vegan recipes , we did some experiments.
Then, since we know that it's okay to pay attention to your figure, but you should never give up on taste, we added some flavorings that can elevate the flavor of these simple biscuits. In short, we have made a truly amazing light dessert recipe, excellent to enjoy for breakfast dipped in milk or for a 5 o'clock tea.

Preparation
How to prepare the light biscuits recipe
Start by dissolving the sugar in warm water .
Then add the two flours and the yeast , preferably sifted, and start mixing with a wooden spoon.
Finally add the oil , vanilla and lemon zest and finish kneading. You will get a rather moist mixture but you don't have to worry about it: wrap it in cling film and transfer it to the fridge for an hour or two.
Once the resting time has elapsed, recover the dough that will have solidified. Break off some balls about the size of a walnut , place them on a baking tray lined with baking paper and flatten them with your hand until they reach a thickness of one centimeter.
Bake the biscuits at 180°C for 10-12 minutes , remove from the oven and let cool completely before transferring them to a tin box. As soon as they are baked they will be soft, like all biscuits, but as they cool they will acquire the right consistency.

Conservation
The light biscuits can be kept for a week in a tin container.
