Light, cheap and… very tasty: it’s chicken Cacciatore!

Chicken Cacciatore is not a simple chicken with tomato sauce, but a very noble recipe typical of Tuscan cuisine. It is an economical, substantial and delicious dish, perfect to serve on any occasion and which everyone will really like!
Like many traditional recipes, this one is also widespread throughout Italy and in different variations depending on the region: some use wine, some use broth, others use tomato puree and still others do it plain. Today we will see the traditional recipe, a white variant and also how to do it with the Thermomix. You are ready? So follow us into the kitchen and let's get started right away!
How to make chicken Cacciatore
You can choose whether to prepare chicken thighs Cacciatore style, or to also use breast and other parts. Choose according to your tastes, even whether to buy the whole bird or one already in pieces (if you are not very practical, we suggest this option).
- Let's start with the meat : if you have chosen the whole chicken, clean it and cut it into pieces. Rinse the parts under running water, dry and leave aside.
- Place the butter in a saucepan with the onion, celery and carrot cut into small pieces .
- Let the vegetables go, also adding the two cloves of poached garlic . When they have softened, add the chicken.
- Brown it well on all sides, add the wine and once the alcohol has evaporated, add the peeled tomatoes, salt, pepper, chilli pepper and aromatic herbs (we added the bay leaf).
- Leave everything to cook for about 40 minutes , stirring occasionally.
- When the chicken is nice and soft , serve it by adding a drizzle of oil. Enjoy your meal!
Thermomix Chicken Cacciatore
If you have the legendary robot it's even simpler. Here's how to proceed for those who want to make this recipe with the Thermomix.
- Place butter, garlic and chopped vegetables for the sauté in the bowl and cook for 3 minutes at 100°C , speed. 1.
- Add the chicken and brown it at temp. Varoma , counterclockwise, for about 10 minutes.
- At this point, add the wine and add the various aromas .
- Now add the tomato and aromatic herbs and then cook for half an hour at 100°C counterclockwise and on high speed. Soft.
- After about 40 minutes it will be nice and soft: check that the inside of the meat is white (and no longer pink!) and serve.
Chicken Cacciatore in white
As we anticipated, there are different variations of this dish, including the plain one. In this case , tomatoes are not used , but the dish can be flavored with olives and aromatic herbs to taste (rosemary, sage and bay leaves).
In this case, we also recommend using white wine to deglaze, which is more delicate and will give the dish a pleasant acidic note .
For other flavours , try the chicken curry , it's really the bomb!
storage
If you have leftover chicken Cacciatore, store it in an airtight container for about 2 days . If necessary, reheat it in a pan or in the microwave before enjoying it. We advise against freezing it: instead, freeze the raw chicken (obviously, only the fresh one) and take it out within the following month .
