Preparation of Lombard-style fried pumpkin

  1. First, peel the pumpkin, remove the seeds and filaments from the center then cut the pulp into slices. For a greater scenographic effect you can also cut out round disks using a pastry cutter . The important thing is to obtain a thickness of about 1 cm.
  2. Pour the sliced ​​pumpkin pulp into a saucepan. Cover completely with milk, close with the lid and place on the heat. Once it reaches the boil, lower the heat slightly and continue cooking for 3-4 minutes at most so that the pumpkin softens slightly.
  3. Lift the pumpkin slices with the help of a slotted spoon, being careful not to break them, and leave to cool. Pour the flour and breadcrumbs into two different plates. In another plate, beat the eggs with a little salt and pepper.
  4. At this point flour the pumpkin slices a little at a time then dip them in the beaten eggs and then in the breadcrumbs to obtain a uniform breading .
  5. Melt the butter in a large pan and fry the pumpkin slices a little at a time and cook until they are nice and golden.

Conservation
