Low expense and maximum return with these last minute New Year’s appetizers
Similar to stuffed sandwiches, but classy! Here is the recipe for preparing delicious New Year's Eve finger foods, perfect for a standing buffet.
Are you still at sea and haven't yet decided which finger foods to serve for your New Year's Eve dinner? Sandwiches filled and served like ravioli are an excellent idea and you can even prepare them at the last minute. Furthermore, there are many sandwich fillings suitable for this type of preparation.
In the recipe below we will make two different fillings : one based on courgettes, carrots and robiola and one with olives, hard-boiled egg and mayonnaise. Then, you can decorate the sandwiches as you see fit . Let's see together how to make them!
Ingredients

- Wholemeal bread for sandwiches – 8 slices
- Cooked ham – 2 slices
- Boiled egg – 1
- Carrot – 1
- Courgette – 1
- Mayonnaise – 1 tbsp
- Soft cheese such as Robiola – 80 g
- salt – to taste
Preparation

Start by washing and trimming the courgette and carrot. Peel the carrot then grate both the courgette and the carrot into julienne strips. Brown the vegetables in a pan with a drizzle of oil for 4-5 minutes , then turn off the heat and leave to cool. Then mix them with the robiola. This is our first filling!
In the meantime, chop the hard-boiled egg coarsely and cut the stuffed green olives into slices. Then mix them with a spoonful of mayonnaise. And the second filling is ready too.
Using a pastry cutter or round glass, cut 16 discs from the bread for sandwiches and the same number of smaller discs of cooked ham.
Let's now move on to the composition: take the bread discs and place the cooked ham discs on top. Then, stuffed with the mix of robiola and vegetables or with the mix of egg, olives and mayonnaise and cover with a disk of bread (just like a sandwich).
Decorate your delicious sandwiches as you prefer based on your imagination, then transfer the filled sandwiches onto a tray and leave to rest in the refrigerator until ready to serve.
If you like simple sandwiches more, we recommend you try the ones with wholemeal bread and tomatoes .
Conservation
We recommend consuming these delicious little appetizer sandwiches freshly prepared, to best enjoy their freshness and flavor. It is not recommended to store them in the freezer, as freezing could compromise the consistency of the bread and the quality of the ingredients.
