Today we discover how to prepare a Vicenza dessert with poor origins , macafame. Also known as maccafame or bacafame , it is prepared with stale bread soaked in milk, apples and other ingredients based on availability. In fact, every family has its own recipe because this poor dessert, like many others, was born from the need to reuse kitchen leftovers .
The cake with stale bread and apples can in fact be enriched with dried fruit, figs or other sweet ingredients to taste. We will give you the "basic" recipe but know that just as the Vicenza tradition dictates, you can revisit it as you prefer.
How to prepare macafame with the original recipe
- Break the stale bread into pieces with your hands and transfer it to a bowl. Then cover it with warm milk and let it rest for 15 minutes.
- In the meantime, peel the apples and cut them into chunks. Season them with lemon juice after removing the zest and grating it.
- Once the bread is soft, work it with an electric whisk and add the eggs, melted butter, sugar, grated lemon zest and soaked and squeezed raisins. Finally, add the yeast and the walnuts crumbled with your hands.
- Mixing by hand with a spoon, also add the apples .
- Pour everything into a buttered and floured mold of 24-26 cm in diameter and cook at 180°C for 50 minutes , leaving to cool completely before serving. For an extra touch of sweetness, top with icing sugar.

Conservation
Macafame should be stored in a cool place due to the presence of fresh fruit. Then wrap it in cling film and place it in the fridge if you don't use it within a couple of days .
