Mandarin bread

Preparing the mandarin pan is really simple: just combine all the ingredients in a blender and blend. Here is our recipe.
If you are looking for a quick and easy dessert perfect for winter , mandarin bread is the one for you. Its preparation is inspired by the more classic orange bread , a Sicilian recipe which involves the use of a whole orange in all its parts (including peel and white parts) for the preparation of a soft and very fragrant dessert .
The sweet mandarin pan instead uses, as is easy to imagine, mandarins . This is a simple recipe where all the ingredients are put in a blender and blended. The important thing is to choose organic mandarins , preferably with thin skin, and untreated. This butter-free cake is perfect for breakfast, a snack but also to be served at the end of a meal.

Ingredients
For the mandarin bread
- Flour 00 – 300 g
- Eggs – 2
- Granulated sugar – 200 g
- Seed oil – 100 ml
- Organic mandarins – 250 g (weighed with peel)
- Yogurt – 125 g
- Baking powder – 1 sachet
- Fine salt – 1 pinch
To complete
- Powdered sugar – to taste
Preparation
Mandarin bread
Wash the mandarins well and remove any pits by cutting them in half without peeling them. Then transfer them to a kitchen blender and blend until you obtain a puree.
Add the other liquid ingredients, i.e. the eggs , yogurt and oil , and blend to form a cream.
Finally add the sugar , the flour sifted with the yeast and the pinch of salt . Blend again and once you have obtained a homogeneous mixture you are ready to bake.
Pour it into a plum cake mold lined with baking paper and cook at 170°C for 45-50 minutes, testing with a toothpick before taking it out of the oven.
Once cold, remove the cake from the mold and decorate with a sprinkling of icing sugar if desired.

Conservation
The blended mandarin cake can be kept under a cake stand for 3-4 days , as soft as if it had just been made.
