Marinated courgettes: tasty and appetizing!
Here's how to prepare marinated courgettes, to serve as an aperitif or to accompany meat or fish main courses.
Marinated courgettes are excellent to serve as an aperitif with crusty bread bruschetta or as a side dish, to accompany meat or fish-based main courses. There are those who prepare courgettes marinated in lemon, those who cook them and those who leave them to marinate raw.
Today we see two recipes for those who want to marinate cooked or raw courgettes: some preparations involve cooking the courgettes in a pan but, if you want to avoid cooking them, you can also make delicious raw courgettes marinated in vinegar, definitely quicker . All you need to do is cut the vegetables thinly and leave them to marinate for longer.
How to make cooked marinated courgettes
- To prepare the marinated grilled courgettes, start by carefully washing the vegetables, then dry them and cut them into slices .
- Cook on a hot grill for 5 minutes until the characteristic lines form.
- Transfer the courgettes to a plate and let them cool.
- Meanwhile, finely chop the herbs and garlic. Combine them in a jar together with oil, vinegar, salt and pepper and shake well to obtain an emulsion.
- Take the now cold courgettes and place them in a baking dish. Pour the marinade making sure it reaches all the points then cover with cling film and leave to rest in the fridge for an hour before serving.
The marinade can be customized according to your tastes. Parsley can be enriched or integrated with mint or oregano , all flavors that go well with courgettes. Furthermore, the vinegar can be replaced in whole or in part with lemon juice to obtain delicious lemon-marinated courgettes perfect for the summer.

How to make raw marinated courgettes
If you are looking for a way to eat raw courgettes we recommend following this procedure to marinate them raw !
- Wash the courgettes carefully, clean them and cut them into thin slices with the help of a mandolin. Alternatively you can use a potato peeler.
- Transfer them to a serving dish and prepare the marinade by emulsifying oil, salt, pepper and aromatic herbs with vinegar. The simplest way is to put everything in a jar with a cap and shake vigorously.
- Season the courgettes with the emulsion, place in the refrigerator for at least 3 hours before serving. In reality, the longer they marinate, the tastier they are.
Courgettes prepared with this technique can be served as an appetizer or as a side dish but they are also excellent for filling sandwiches, sandwiches or wraps together with cold cuts and cheeses.

Courgettes marinated in vinegar can be kept for 2/3 days in the fridge covered with cling film or in an airtight container.
