Marshmallows can be made at home with a few simple ingredients: here’s how

Marshmallows are the sweets par excellence: soft and fragrant, there is no child who is not attracted to them. We adults, on the other hand, who pay more attention to the label, have often asked ourselves questions about the authenticity of this product which, as always, should be included in a balanced and healthy diet.
The marshmallow recipe involves the use of a few simple ingredients , many of which you probably already have at home. It will be difficult to obtain the classic rounded shape, but the taste and texture will remain unchanged. To color them, all you have to do is add a few drops of gel coloring.
How to prepare marshmallows with the simple recipe
- First of all, soak the isinglass in cold water. Separately, in a saucepan, heat the water with the sugar to create a syrup. For this operation you need a kitchen thermometer because the syrup must reach 121°C.
- Beat the egg whites until stiff peaks form using an electric whisk or a stand mixer fitted with a wire hook. Add the syrup slowly, stopping whisking the eggs only when they begin to detach from the bottom. Then add the lemon juice and the well-squeezed gelatine.
- Mix the starch with the icing sugar and sprinkle half of it on a sheet of baking paper. Pour the whipped mixture and level it with a spatula.
- Sprinkle with the remaining powder, cover with a sheet of baking paper and roll out with a rolling pin until 2 cm thick.
- Place in the refrigerator for 4 hours then cut it with a knife into pieces measuring approximately 1 by 3 cm and shape them with the help of the remaining powder.
Your marshmallows are ready to be enjoyed! Some recipes include glucose syrup among the ingredients, but we have shown you how it is not necessary to prepare them!
