To get the most out of this simple recipe it is essential to choose the right melon. In fact, it must be at the right level of ripeness: if it is too "forward" it will make the cake moist, if it is unripe it will not give it the right flavour. As for the variety, opt for white melon, netted melon or cantaloupe.

Preparation of the melon cake

  1. Clean the melon, removing the peel and seeds, then cut it into small cubes . Keep the fruit aside and dedicate yourself to preparing the basic cake dough.
  2. Place the eggs and sugar in a bowl and beat with an electric whisk or by hand until the mixture is soft and fluffy.
  3. Add the milk, oil and flour a little at a time, preferably sifted with the yeast.
  4. Finally, add the diced melon, stirring gently from bottom to top with a kitchen spatula.
  5. Line a 24cm diameter springform pan with baking paper and pour in the mixture. Cook at 180°C for 40 minutes, testing with a toothpick before taking out of the oven.
  6. Let it cool completely, remove it from the mold and dust it with icing sugar before serving.

In the same way you can make a soft and fragrant cake with white melon or winter melon. What changes? In the preparation steps essentially nothing, as you simply need to replace the classic orange-fleshed melon with the white one in the same quantity.

Fresh and summery, always based on melon, this cheesecake also deserves a place among the melon recipes to try!

storage

The cake thus prepared can be stored at room temperature in a special container for 3-4 days after preparation.
