Mexican chicken

Mexican chicken is a unique dish with a thousand intense aromas, it is also easy to make, you just have to add the different ingredients at the right time.

Mexican chicken is a very tasty dish. We chose a version with chicken pieces but, by adjusting the cooking times, you can also do it with pieces of chicken left with their bone. For morsels, any part of the chicken is fine, but the best and tastiest is that obtained from the thighs and thighs. However, you can also use just the breast, or a whole chicken, obviously boned.

Preparation of Mexican chicken

  1. Wash the chicken, dry it and, if not already done by the butcher, debone it. Cut the chicken meat into bite-sized pieces or strips, removing any skin.
  2. Wash the peppers, cut them in half and remove the stem, seeds and indigestible internal white ribs. Cut them into pieces. Peel the onion and cut it into slices. Cut the fresh chilli pepper into slices
  3. Take a large non-stick pan or pot. Pour in the oil and bring it to temperature on a low heat.
  4. Add the onion and chilli and fry for 4-5 minutes , stirring often to avoid burning. Pour in the tomato puree, raise the heat and cook for two minutes.
  5. Add the peppers, sweet paprika and a ladle of hot water. Cook for 15 minutes , bringing the heat to medium and stirring occasionally.
  6. If necessary, add more hot water, but it is important that at the end of the 15 minutes the liquids have almost completely evaporated. Add the chicken, brown it for two minutes, then add the corn.
  7. Every now and then moisten with a few spoonfuls of hot water, and cook for five minutes.
  8. Add the drained and rinsed beans and cook for another 3 minutes. Season with salt and pepper if necessary.
  9. Divide the chicken and vegetables between serving plates and serve immediately. You can garnish it with slices of chilli pepper and coarsely chopped parsley.

This quick meat second course can be stored in the refrigerator in an airtight container for up to 2 days.
