Mexican quesadillas, the Tex-Mex recipe of the famous tortillas


Quesadillas

Quesadillas are traditional Mexican wraps that you can easily recreate at home to give a touch of typicality to the table!

Quesadillas are a typical product of Mexican street food served in every corner of the neighborhood and in the most disparate variations. They are made with crispy corn tortillas usually stuffed with chicken, cheese, spices and other simple ingredients. In fact, the name of this dish derives from “queso” , which in Spanish means cheese… the final result will be extremely streamlined !

A tantalizing, tasty and full of flavors idea, in which to indulge yourself with the choice of the ingredients you prefer. Excellent to be served in the center as an appetizer or for an aperitif with friends, or to be eaten directly as a main course for dinner. On sunny days it will also be wonderful to organize an outdoor picnic with these delicious wraps.

Preparation of the quesadillas recipe

  1. Cut the onions into slices not too thin .
  2. Place the chicken breasts on a cutting board and cut them into strips .
  3. Heat a little oil in a non-stick pan, pour the onions and cook over low heat until golden.
  4. Add the chicken strips and cook for about 15 minutes . Then add salt to taste.
  5. Meanwhile, grate the fontina. Then wash the tomatoes well and slice them.
  6. Heat a pan and cook the tortillas on both sides .
  7. Stuff each tortilla with a layer of cheese, onions and shredded chicken.
  8. Then add the tomatoes and the salad, and finish with a last layer of cheese.
  9. Close with another tortilla and press gently to make the cheese adhere.
  10. Once the heat is off, transfer the quesadillas to a cutting board and divide them into 4 parts .
  11. Your quesadillas are ready to be enjoyed while still hot!

You can replace fontina with Edamer, Emmental, Mexican queso or any cheese you like. You can enrich your quesadillas with garlic, corn, olives, peppers, paprika, and with aromatic herbs such as parsley or chives. You could even make your own corn tortillas from scratch!

storage

You can keep the quesadillas in the fridge well covered with plastic wrap or in an airtight container for up to 2 days .
