Microwave eggplant: finally a quick recipe!

How to cook eggplant in the microwave? Here is a simple and quick side dish to prepare, to be combined with main courses of meat or fish.

Microwave aubergines are a delicious side dish and really quick to prepare. This seasonal vegetable is very versatile, aubergines are good grilled, sautéed, grilled and can enrich first and second courses… cooking in the microwave , on the other hand, is a very simple and perfect technique for when you don't feel like turn on the traditional oven. This way you can significantly reduce the cooking time without compromising on flavour.

Before proceeding, remember that every microwave is different , so your cooking times may be longer or shorter than indicated. Here's the recipe!

Preparation of eggplants in the microwave oven

  1. First, wash the aubergines and cut them into cubes of about 1 cm . Since it's a quick recipe, this time we won't even purge them in salt.
  2. Now move on to preparing the sauce : mix the oil, salt and chilli pepper in a small bowl.
  3. Take a pan or container suitable for microwave cooking and pass the garlic clove all over the surface.
  4. Brush the aubergines with the oil and salt dressing and place them in the pan. Cover with cling film suitable for microwave cooking.
  5. Cook in the microwave for 8-10 minutes at maximum power . When cooked, remove from the oven, remove the foil and flavor to taste. Serve the quick baked aubergines immediately !
