Mixed vegetables in air fryer

To prepare this mix of light vegetables with the air fryer, simply melt some seasonal vegetables, cut them into chunks , season them with a little oil and aromatic herbs and transfer them to the basket . How to prepare mixed vegetables recipe in air fryer
- First wash all the vegetables well . Remove the ends of the courgettes and aubergines and clean the peppers by removing the core, seeds and internal white filaments.
- Cut them all into cubes of about 1.5 cm. It is very important that they are uniform so as to obtain perfect cooking.
- Transfer them to a bowl and season them with a few puffs of oil spray (no need to overdo it), dried aromatic herbs to taste (the Provençal mix is excellent), salt and pepper. Stir to distribute all the flavors and transfer to the air fryer basket.
- Bake at 180°C for 20-25 minutes until they are well browned. You can serve them both hot and at room temperature.
To make this garden mix even more substantial you can add a diced potato . For excellent sandy vegetables in an air fryer, add 2 tablespoons of breadcrumbs to the sauce after cutting them.
storage
The mixed vegetables cooked in the air fryer will keep for 2-3 days in the refrigerator , well covered in plastic wrap. You can enjoy them after heating them or at room temperature.
