Mushroom crepes are a delicate and tasty first course, perfect to enjoy on any occasion.

Today we see how to prepare mushroom crepes, a perfect dish for a family lunch or dinner, ideal if you are looking for a rich and delicious dish. There are many different variations of this preparation, both in terms of ingredients and cooking methods.

We will use a mix, which together with the provola and the béchamel will constitute the filling of our homemade crepes. Use any type of mushroom and the cheese you like best, the recipe is the same! How to prepare the recipe for mushroom crêpes

  1. Start by preparing the batter: in a bowl, beat the eggs with the milk and salt, then add the sifted flour, mixing with a whisk to avoid the formation of lumps. A tip to avoid mistakes: when working the mixture, try not to beat the ingredients for too long, otherwise you risk incorporating too much air and the crepes could curl during cooking!
  2. Cover with cling film and leave to rest in the refrigerator for 30 minutes .
  3. Now clean the mushrooms by removing any residual soil with a small knife or kitchen cloth, then cut the final part of the stem and slice them .
  4. Take a pan, place on the heat and heat a drizzle of oil with a clove of garlic. Add the mushrooms and cook them for 5-10 minutes , just before turning off the heat add the parsley, give a good stir again and remove the garlic.
  5. Take the batter and grease the bottom of a large pan with butter. Put it on the heat and pour in a ladle of it , spread well over the entire surface, rotating the pan by the handle and cook for a couple of minutes on each side. Turn it over when the edges start to lift. Continue in this way until all the batter is used up.
  6. Stuff the crepes with the mushrooms and the cheese cut into cubes and close them to form a triangle , or roll them up.
  7. Take a baking dish, butter it and pour a spoonful of béchamel sauce onto the base, then place the filled pasta and cover it with the remaining sauce, finishing with a sprinkling of grated cheese.
  8. Now bake at 180°C for about 20-25 minutes , towards the end of the time you can also raise the heat and leave a few minutes in grill mode to allow the crust to appear.

Conservation

These autumn crepes, a quick and easy first course, can be kept in the refrigerator for a maximum of 2 days in a container with an airtight lid. We do not recommend freezing in the freezer.

Mushroom crepes: all the variations

Mushrooms are a very versatile ingredient in the kitchen, as their taste and aromas make them perfect to combine with many different products . If you want to make crepes, there really are no limits to your imagination, but let's immediately understand which are the best combinations to try .

The first variation on the theme is the mushroom cream crepes . To prepare them, simply blend half the sautéed mushrooms and add them to the béchamel sauce. Then use a spoonful of it in each crepe together with the mushrooms left whole and the cheeses. You will see how delicious it is!

Let's now move on to cheese , one of the main allies of mushrooms. Its sweetness, in fact, marries perfectly with the scents and flavors of the forest. In addition to provola and parmesan , which we chose to use in our recipe, you can try making crepes with mushrooms and ricotta. Place the cheese in a bowl and season it with salt, pepper, olive oil and parsley, then stir with a teaspoon, perhaps adding just a touch of water to make everything softer . For a more intense flavor, choose fontina instead.

In addition to cheeses, the other great combination we propose is, obviously, with cured meats: mushroom and ham crepes are a real must in the kitchen, and you can use both cooked and raw, depending on your tastes. If you like, you can put the raw ham in the pan for a few seconds, so as to toast it and make it crunchy. Add some soft cheese and arugula, and you will have created a fairytale combination!

The crepes with mushrooms and speck are also delicious: this cold cut will in fact give the dish a smoky flavour, which goes perfectly with the mushrooms. Here too you can use a cheese ( try squacquerone ) and some rocket. A pinch of pepper, and the dish is served !
