With the arrival of autumn it is impossible to resist the temptation to prepare some recipes with mushrooms. So here is an idea for preparing mushroom sauce, perfect for seasoning all first courses but truly amazing with fresh pasta .

The mushroom sauce recipe is quite simple : just prepare a light onion-based sauce , add the mushrooms of the variety you prefer, the tomato sauce and cook. If you are looking for a more refined condiment , I recommend preparing the porcini mushroom sauce: you will make a great impression!

How to make mushroom sauce

  1. To prepare the porcini mushroom sauce, start by finely chopping the onion. You must obtain a beat as fine as possible.
  2. Brown it in a pan with oil and a clove of garlic until golden.
  3. In the meantime, clean the mushrooms (you can choose the quality you prefer, and for an extra touch you can also add about 40 g of previously soaked dried porcini mushrooms to the fresh ones). Remove the final part of the stem and clean the head with a damp cloth to remove soil residues.
  4. Then cut them into not too large cubes and add them to the pan, browning them for a couple of minutes.
  5. Season with salt and pepper and add the wine.
  6. Let the alcohol evaporate completely, then add 1 tablespoon of tomato paste and remove the garlic.
  7. Mix well and add the tomato puree .
  8. Let cook for about 20-30 minutes , until the mushrooms are tender and the sauce has thickened.
  9. Complete with a sprinkling of parsley and use to season your favorite pasta shape.

Sauce with dried mushrooms: the recipe suitable for all year round

We can't always have fresh mushroom sauce. However, this condiment sauce is really delicious and we have found the solution to enjoy it all year round. You just have to prepare a sauce with the dried mushrooms , and that's it.

Take the mushrooms and soak them for about 10-15 minutes in warm water , while preparing the sauté in a pan with a drizzle of oil. Then add the mushrooms and let them brown, adding, if necessary, a little of the water you used to revive them (so the forest aroma will be even more intense). Finally, season with salt and pepper, add tomato paste and sauce and cook until the sauce thickens. Finish with the parsley and use your dried porcini mushroom sauce as a condiment in the pasta or with the low-fat ravioli .

Conservation

This sauce, made with both fresh and dried mushrooms, can be stored for a maximum of 2-3 days in the refrigerator in a container with an airtight lid. We do not recommend freezing in the freezer.

Alternatively, you can also place the sauce, while still boiling, in sterilized glass jars , close them tightly and turn them upside down until they return to room temperature (so as to create a vacuum). Then put them in the pantry, in a place away from sources of light or heat, and keep it for up to 2 months.
