Preparing poached artichokes is really simple and very few ingredients are needed. Here is the original Neapolitan recipe.

If you are looking for a veg side dish that is easy and quick to prepare, but at the same time tasty and perfect with both meat and fish main courses , Neapolitan-style poached artichokes are the recipe for you. This typical product is obtained by cooking artichokes, in segments or whole, in a little water and flavoring them once cooked with olives and capers.

Therefore, very few ingredients are needed to make this Neapolitan side dish but we can guarantee you that you will not be disappointed at all. As always, the biggest difficulty in recipes with artichokes is cleaning them but you can opt for either an already cleaned product or a frozen one if you really don't want to embark on this adventure.

How to prepare the poached artichoke recipe

First clean the artichokes by removing the tips, the external leaves, the internal beard and the external layer of the stem, which is too leathery. Divide them into four and place them in a bowl filled with water acidulated with the juice of a lemon , leaving them for 30 minutes.

Drain them well from the water and transfer them to a pan with the oil and the garlic clove.

Brown them for 2 minutes on a high flame then add the desalted capers , olives , salt and pepper . Pour a ladle of water , cover half with the lid and leave to cook for approximately 25 minutes or until the liquid has almost completely absorbed.

Complete with dried oregano and serve immediately.

Conservation
