Never give up dessert: how to prepare light cheesecake

Perfect for any occasion, the no-bake light cheesecake is really simple to prepare.

If you can say no to dessert, you deserve all our respect. If, on the other hand, you are an incurable sweet tooth , perpetually on a diet, we want to be at your side with a light cheesecake. As long as you leave us a slice! Creamy and delicate, with an intense vanilla scent, it is prepared just like all the most traditional cheesecake recipes: first a base of dry biscuits and then the covering with cream cheese and Greek yogurt.

To obtain a very light cheesecake, all we have to do is replace the higher-calorie cheeses (such as mascarpone) with lighter ones that are still perfect for this purpose. Fruit (optional) is added to make this light dessert even better, added at the end as a decoration and perfect to accompany the sweetness of the cheesecake.

How to prepare the light cheesecake recipe

  1. To prepare the light cheesecake, start by melting the light butter in a bain-marie.
  2. Separately, blend the biscuits until they become a powder (you can also put them in a bag and crush them with a rolling pin).
  3. Add the butter to the biscuits, mixing well with a spoon, then pour everything onto the bottom of a 20cm diameter cake tin lined with baking paper.
  4. Press well to obtain a compact base of uniform thickness.
  5. Transfer everything to the refrigerator for at least half an hour.
  6. In the meantime, soak the isinglass in a bowl full of cold water for at least 10 minutes.
  7. Separately, mix the yogurt with the spreadable cheese and sugar (you can also replace it with fructose or honey).
  8. Dissolve the isinglass , after squeezing it, in a couple of spoons of hot water then add it to the cheeses, mixing well.
  9. Pour the cream onto the now cold biscuit base and level the surface.
  10. Place the cheesecake in the fridge to harden for at least 5-6 hours then, just before serving, decorate with fresh fruit to taste .

You can also avoid using isinglass , naturally the final result will be less compact, and we recommend serving the slices as soon as you take the cake from the fridge.
