Nino's focaccia is a web star . Nobody knows who he is, but his recipe has conquered everyone and has been able to spread like the original on any cooking blog or Facebook group. This can only be a guarantee!

The peculiarity of this tall and soft focaccia is that it contains a raw potato in the dough. That's right, no potato flakes or boiled potatoes as is used with Apulian focaccia . Is this what gives the dough all that softness? Hard to say. All you have to do is try it and find out how to prepare it!

How to prepare Nino's focaccia recipe without Thermomix

  1. Place the potato , after peeling it and cutting it into chunks, into a mixer together with the yeast . Blend at high speed for one minute. This recipe was created for the Thermomix: if you have it you can follow the dedicated recipe .
  2. Transfer the mixture into the bowl of a stand mixer fitted with the hook, then add the water , flour , salt and sugar and knead for 5 minutes. When the dough has come together, transfer it to a bowl to rise for at least an hour or until doubled. We recommend placing it in the oven with the light on and the light on.
  3. Now divide the dough and spread it into two well-oiled round pans of approximately 24 cm in diameter. Use your fingertips and not a rolling pin so as not to break the bubbles formed during leavening. Alternatively you can use the oven tray.
  4. Let it rise for another 30 minutes before decorating it with cherry tomatoes, oregano, a few flakes of coarse salt and drizzle it with a drizzle of oil. Bake at 200°C for 20 minutes.
  5. Nino's focaccia is also good fresh out of the oven and you can customize it as you like : cherry tomatoes, onions, anchovies, grilled vegetables, or transform it into a pizza by enriching it with tomato and mozzarella. Versatile and delicious, you will never abandon this recipe!

Conservation

This delicious focaccia can be kept in a cool, dry place for 2-3 days , inside a paper bag or food container. We do not recommend freezing.
