Orange cream
There are infinite ways to enjoy this orange cream, one better than the other: spoonful with some biscuits or as a filling. The choice is yours!
We thought about preparing the orange cream to fill a dessert but something happened during the taste test that prevented us from going any further: we finished it all one teaspoon after another ! Goodbye filled desserts then, but on the other hand we discovered that serving custard with a spoon is not a bad idea after all.
The secret to obtaining it so good lies not only in the use of sweet and organic oranges , but also in the presence of their juice inside the cream. For the rest, in fact, the preparation is similar to that of the traditional custard based on milk, egg yolks, sugar and flour . Furthermore, if you wish, you can replace the flour with an equal amount of starch to obtain a gluten-free orange cream . Ready to discover doses and steps of this delight?
How to prepare the orange cream recipe
- First, make sure you use organic, untreated oranges . Wash them well, dry them and then grate the zest without affecting the white, bitter part.
- Then squeeze the juice to obtain the quantity reported in the recipe and filter it through a fine mesh strainer.
- In a saucepan, mix the egg yolks , sugar , flour and orange zest with a whisk until you obtain a smooth cream.
- Pour in the hot milk , stirring constantly, and the orange juice .
- Transfer to the heat and start cooking the cream, stirring occasionally to prevent it from sticking.
- It will take about ten minutes on low heat for the cream to take on the right consistency.
- Once ready, transfer it to a bowl and cover with cling film so that a film does not form on the surface.
- Let it cool completely before using it.

Conservation
The orange cream can be kept in the refrigerator for 2-3 days , well covered in cling film. If it is lumpy when you use it, you can easily blend it with the immersion blender.
