Pan-fried chicken thighs
White meats are among the most used in the kitchen: let's see the recipe for pan-fried chicken thighs.
Cooking white meat is quite simple and does not require long cooking. In fact, pan-fried chicken thighs are a simple and tasty second course of meat that can be prepared without too much difficulty in about 30 minutes.
Pan-fried thighs are excellent served with a side dish of roasted potatoes , prepared simply by cutting the potatoes into wedges and cooking them in the oven with oil and rosemary or alternatively cooking them together with the chicken. To give even more flavor to the meat, you can marinate it before cooking : but let's go in order and see how to prepare this recipe !
How to prepare the pan-fried chicken thighs recipeÂ
- First, heat two generous rounds of oil in a pan with the garlic and aromatic herbs of your choice. We used sage and rosemary.
- Then brown the chicken thighs for 5 minutes , placing them on the skin side.
- Add the wine and, when the alcohol has evaporated, add salt and pepper and cover with the lid. Leave to cook for 20 minutes over low heat without ever opening so that the steam that forms keeps the meat moist.
- After 20 minutes, remove the lid and test for cooking: insert the tip of a knife until it touches the bone: if the liquid that comes out is transparent then the thighs are cooked, if instead it is pink, continue cooking with the lid on for another 5 minutes and repeat the test.
- Finally, brown the meat on the other side for 5 minutes. Season again with salt and pepper and serve hot with a side dish of your choice.

The chicken meat is lean and tasty and remains very tender when cooked. However, if you wish to obtain an even lighter dish then remove the skin from the thighs, massage them with salt and pepper and brown them immediately for 5 minutes on each side, then cooking with the lid on for 20 minutes . Furthermore, instead of white wine you can also use beer or lemon juice: it will still be delicious.
We recommend serving this second course with a side dish of your choice (the classic baked potatoes are excellent) or with seasonal vegetables.
Conservation
They can be stored in the fridge for a maximum of 2-3 days , in a container covered with transparent film. We do not recommend freezing in the freezer.
