Let's discover together how to prepare a tasty side dish based on courgettes and carrots in a pan in less than 30 minutes.

Creating combinations of two or more vegetables is an excellent way to bring a tasty but at the same time light and quick to prepare side dish to the table. This is the case of pan-fried courgettes and carrots, perfect for accompanying meat and fish dishes and ideal if you really don't know what to cook other than a salad.

Preparing this healthy side dish is really simple because it will be enough to cook the vegetables in a pan with some aromas until they are tender and then serve. To flavor the dish we used parsley and garlic which go well with both carrots and courgettes but you can also opt for mint or thyme.

Preparation

Pan-fried carrots and courgettes

First wash the courgettes , remove the ends and cut them into quarters lengthwise and then into chunks. Also peel the carrots and, after removing the ends, cut them in the same way.

In a pan, heat the oil with the garlic clove (for a more delicate flavour, leave it unpeeled) then add the carrots and courgettes. Cook over high heat for a few minutes, then put the lid on and adjust the heat to medium power.

Leave to cook for approximately 15 minutes or until the vegetables are tender, then season with salt and pepper and flavor with freshly chopped parsley . Before serving, remember to remove the garlic clove.

If you want, you can also prepare the simplest sautéed courgettes , a very tasty summer side dish that can satisfy all your needs. If, however, you prefer a recipe based only on carrots then we recommend the simple yet tasty milk carrots .

Variants

This dish can also be flavored to taste with other aromatic herbs (try it with thyme or marjoram) or enriched with other seasonal vegetables . Among the best combinations we recommend broccoli and potatoes. If you want to give the dish an extra boost of flavour, add a couple of spoons of soy sauce halfway through cooking. In this "oriental" variant we recommend adding grated ginger (directly together with the garlic) and a sprinkling of sesame seeds before serving.

Conservation

This side dish made with sautéed courgettes and carrots can be kept in the refrigerator for 2-3 days . You can reheat it either in a pan or in the microwave before consuming it.
