Ingredients
For the radicchio
- Radicchio – 1 head
- Breadcrumbs – 2 tablespoons
- Grated cheese – 2 tablespoons
- Extra virgin olive oil – 2 tablespoons
- Garlic – 1 clove
- Fine salt – to taste
Preparation
Pan-fried radicchio with breadcrumbs
First, cut the radicchio in half lengthwise, holding the core. Rinse it under running water and shake it well to remove as much excess as possible. At this point you can move to a cutting board, remove the base then cut the radicchio into thin strips.
In a pan, heat the oil with the crushed garlic clove, then add the radicchio, a pinch of salt and cook for the first 5 minutes on a high heat, stirring often, then another 5 minutes on a medium heat.
Once tender, add the breadcrumbs and parmesan , mix and leave on high heat for a couple of minutes. The important thing is that when you add the bread and cheese the radicchio vegetation liquid has completely evaporated. If not, turn up the heat and let it dry.
Serve your side dish piping hot.
To obtain a dish that is not too bitter you can use round radicchio or add a handful of previously soaked raisins and a spoonful of pine nuts during cooking.
