Pan-fried squid, very tender and ready in 10 minutes!

Pan-fried calamari: the recipe for preparing an easy and perfect fish main course to serve for a dinner with family or friends.

Today we leave you the recipe for pan-fried calamari. We sauté them quickly so that they remain nice and tender and blend with white wine , which goes perfectly with the fish. And, to conclude, a nice sprinkling of parsley cannot be missing!

This fish recipe is quick and easy, but consider that it will take some time to clean the squid, especially if you have never done it. To overcome this problem you can ask the fishmonger to do it for you or buy the frozen ones already cleaned (for defrosting proceed as indicated on the package so as not to make mistakes).

How to cook squid in a pan

  1. First of all, clean the squid , even inside, and rinse them under cold running water to eliminate any residual entrails.
  2. Dry the squid and cut the pockets into pieces (rings).
  3. In a non-stick pan, brown a little oil, then add some garlic. You can also add chilli pepper if you like.
  4. Sauté the squid for 2 minutes , add the white wine and continue cooking just long enough for it to have evaporated.
  5. Once cooked, add salt and pepper.

Instead of wine you can also use the juice and zest of a lemon, as long as it is organic, as seen in this video .

If you are a fan of sauce, however, you cannot miss trying the inevitablestewed calamari : the main difference with the dish we have just cooked is precisely in the presence of tomato .

Which side dish to match?

With calamari you can choose a vegetable side dish based on seasonality and you will hardly go wrong given the delicate flavor of the main ingredient. If you want to elevate this dish, however, you can try with caramelized onions. Get: 800 g of golden onions and 50 g of brown sugar.

  1. Peel the onions, remove the outer layers and the two ends. Cut them in half, then slice them thinly.
  2. Take a large pan, pour a drizzle of olive oil on the bottom and place on the heat.
  3. Add the onions and fry for 5 minutes , then add salt and cover with the lid.
  4. Cook the onions for another 10 minutes then add the sugar and continue cooking for another 20/25 minutes maximum, removing the lid for the last 5 minutes.

Conservation

I advise you to store the squid prepared following this recipe in the refrigerator and in an airtight container for a maximum of 1-2 days.
