How I would prepare the pan-fried friggitelli with the quick recipe.
- First wash the peppers under running water then dry them with kitchen paper. There is no need to remove the seeds because, as mentioned, they are almost completely absent.
- In a pan, heat the oil with the garlic, then add the peppers and about half a glass of water. Leave to cook with the lid on over medium heat for about 20 minutes, adding salt at the end. If desired, a grind of black pepper also helps to enhance the flavour.
