Preparation of panna cotta with agar agar
- To prepare the agar agar panna cotta without gelatin, start by putting the liquid cream and sugar in a saucepan . Add the agar agar and mix well with a spoon or hand whisk.
- Score the vanilla bean lengthwise with the tip of a knife. Extract the seeds and put them, together with the pod, in the cream with the sugar.
- Put the saucepan over low heat and let it simmer for about 3 minutes without ever stopping stirring.
- Turn off the heat, remove the vanilla pod and let it cool just for a few minutes. At this point, transfer the mixture into special single-portion molds or into a panna cotta mold.
- Leave to rest in the refrigerator for 2-3 hours . After this time, remove the cake from the molds and serve as you prefer.

The panna cotta thus prepared can be stored in the refrigerator for up to 2 days after preparation.
