How to prepare the parmesan risotto recipe with the Thermomix

  1. Coarsely chop the onion and mince it for 15 seconds. speed 10. Spatulate everything on the bottom and repeat the operation.
  2. Then add the oil and brown everything for 4 minutes. 100°C Speed 1.
  3. Toast the rice by setting the Anti-clockwise mode (which from now on must always be active) for 3 minutes. at 100°C speed. Soft.
  4. Blend with white wine for 3 min. at 100°C speed. Soft Anticlockwise then pour in the broth, cooking the rice for 16-18 min. 100°C speed Soft Counterclockwise.
  5. Stir in the butter and parmesan for 1 minute. speed Soft Counterclockwise. Let it rest for 5 minutes before serving.

Conservation

If possible, enjoy the freshly made risotto but if there is any leftover, place it in the fridge, closed in an airtight container, for a maximum of 2-3 days.
