Pasta at the old tavern

Old-style pasta is a typical first course as simple as it is rich in flavour, based on cherry tomatoes, vodka and much more.
Are you looking for a simple but richly flavored recipe to amaze all your guests? Try the traditional pasta at the old tavern. It is a spicy and tasty first course, captivating already in the name which recalls a restaurant dish.
At the base of the dish are cherry tomatoes which, in the traditional recipe, should first be blended with vodka in a pan and then roasted in the oven. As you will see, this step can easily be skipped by simply prolonging the cooking in the pan. Once cooked they will be blended and mixed with the cream, resulting in a velvety and tasty cream .

Preparation

Pour the olive oil into a non-stick pan. Chop the garlic and onion and add them to the oil, frying everything over a low heat.
To the sauté, add oregano and chilli pepper . At this point, add the vodka .
Immediately add the cherry tomatoes cut in half and season with salt and pepper . Cook over low heat for 10 minutes, stirring occasionally.
After this time, don't stop: transfer everything into a baking dish. Bake in the oven at 180°C for 30 minutes . Alternatively , continue cooking in the pan for another 20 minutes. In both cases you must find the cherry tomatoes well roasted.
Transfer them to a blender and blend them. Once you have a smooth cream, pour it back into the pan, add the cream and mix.
Cook the pasta (pens are ideal) for the time indicated on the package, then drain it and sauté it in the pan with the sauce. Complete with parsley and grated parmesan and serve.
The preparation is really simple but here is a short video with all the steps. Depending on whether you use fresh cream or cooking cream you will obtain a more or less fluid but still excellent sauce.

Old tavern pasta is a simple first course but with a particular aftertaste. You can enjoy it at the moment or keep it for a maximum of 1 day in the fridge .
Curiosity
The origin of this dish is not entirely clear. It is most likely to be found, if only for the name, in the old trattorias and taverns that tended to use what they had available to feed their diners. What not everyone knows, however, is that in Florence there is a restaurant of the same name that has made the dish its flagship along with other typical delicacies of Tuscan cuisine.
