Pasta with asparagus and sausage
Pasta with asparagus and sausage and its tastier variations are perfect if you are looking for quick and easy recipes for all occasions.
Two ingredients that combine perfectly with each other , creating a mouth-watering pasta sauce: we are talking about asparagus and sausage. The fresh and spring flavor of the former creates something incredible with the composite of the latter which finds its culmination in the pasta with asparagus and sausage.
In fact, who said that to bring delicious first courses to the table you have to spend hours at the stove? Sometimes during the cooking time of the pasta you dedicate yourself to the sauce and that's it. If you can also prepare even tastier variations based on your tastes, you really have no excuse not to try our recipe!
How to prepare the pasta recipe with asparagus and sausage
- First, wash the asparagus under running water. Remove the woody part of the stem by simply flexing the latter then cut it into rounds leaving the tip intact.
- Chop the onion and brown it in a pan with a drizzle of oil and, after a few minutes, add the sausage removed from the casing and crumbled.
- Brown the meat, add the white wine and wait for all the alcohol to evaporate .
- Let it cook for a few more minutes then remove the sausage and place it in a separate bowl.
- In the same pan, add 1 drizzle of oil and cook the asparagus until they are tender (you can add the tips at the end of cooking or cook them later, just to brown them).
- In the meantime, cook the pasta in plenty of boiling salted water for the time indicated on the package.
- Once the pasta is ready , drain it al dente and sauté it in the pan, adding the seasoning and cooking water as needed.
- Serve hot, finishing with a sprinkling of grated cheese if desired.

Pasta with sausage and asparagus cream
Alternatively you can also prepare a pasta with asparagus cream and sausage. To do this, cook the stems and tips separately. When the first courses are ready, place them in the bowl of a blender , season with salt, pepper, 1 ladle of pasta cooking water and add 3-4 fresh basil leaves (you can also add a handful of grated cheese if you like). Blend everything until you get a nice smooth cream. Once the pasta is ready, drain it in the pan with the sausage, add the cream and a little more cooking water . Mix everything well and only at the end add the asparagus tips.

You can keep leftover pasta in the refrigerator for a couple of days and consume it after reheating it in a pan or in the microwave.
