Pasta with aubergine and courgette sauce, a simple first course
It takes very little to prepare eggplant and zucchini pasta or one of its tasty variations.
You don’t need who knows what ingredients to bring something tasty to the table and eggplant and zucchini pasta is proof of this. Whether you are looking for a vegetarian first course, or if you simply want something light and quick to prepare , this recipe is for you.
We have decided to keep the preparation as simple as possible and enhance the flavor of the vegetables by using aromatic herbs. And what’s better than basil with aubergines and courgettes? The beauty of this summer recipe is that it is excellent both hot and cold and, to make it a real single dish , you can add mozzarella or feta.
How to prepare the eggplant and zucchini pasta recipe
- First wash the vegetables, remove the ends and cut them into half-centimeter cubes. Cook them in a pan with the oil and the garlic clove until they are golden brown. Finally, season with salt and pepper.
- Boil the pasta for the time indicated on the package then drain and toss with the vegetables, perfuming with the chopped basil with your hands . If you want you can stir it with a few tablespoons of cooking water.
- Spread out on plates and complete with a sprinkling of Parmesan cheese.
This recipe really lends itself to many variations. With a minimum of effort you can, for example, add sliced olives while cooking together with the vegetables. A dozen will be enough and they will give the dish a unique flavor. The idea of making the dish more colorful is also excellent by cooking 200 g of cherry tomatoes cut in half with a clove of garlic, a drizzle of oil and chilli in a separate pan. Once the pasta is ready, add it all and serve. In short, a bit like we did with zucchini and cherry tomatoes . As you can see, these are all quick and easy recipes and they are very different from the basic version.
storage
The zucchini and aubergine pasta can be kept in the refrigerator for a couple of days . You can consume it at room temperature or heat it in a pan or microwave.
