In this period, aubergines and tomatoes are never lacking on our tables. Eggplant and cherry tomato pasta is one of our quick and easy recipes with the tastiest fresh vegetables. Making this dish is very simple and you can use the pasta shapes you prefer. In addition to aubergines, you can also add other grated vegetables such as courgettes or carrots.

Preparation of pasta with aubergines and light cherry tomatoes

  1. First wash the aubergine , clean it and cut it into cubes, then also wash the cherry tomatoes and cut them into wedges.
  2. Take a shallow pan, pour a drizzle of olive oil, a whole clove of garlic on the bottom and brown for a few moments.
  3. Add the aubergines, sprinkle with salt and pepper and cook the aubergines for 5 minutes.
  4. Remove the garlic, add the cherry tomatoes and cook for another 5 minutes.
  5. Once cooked, add the chopped rosemary and in the meantime cook the pasta in salted water.
  6. When it is al dente, drain it and quickly sauté it in the pan with the aubergine and cherry tomato sauce.

Delicious variations of aubergine and cherry tomato pasta

  • Pasta with aubergine sauce, rini tomato and olives: for this traditional variant you will need 50 g of pitted green (or black) olives. After browning the aubergine in the pan, add the olives so that they gain the best flavour . The rest of the preparation remains unchanged.
  • Pasta with aubergines, cherry tomatoes and tuna: add 150 g of tuna to the preparation ingredients. For convenience we chose the canned one, and we eliminated its oil. Add it to the pan after browning the aubergines and cherry tomatoes: you'll taste the flavour!
  • Pasta with aubergines, cherry tomatoes and bacon: add 50 g of this ingredient to the preparation. Brown the bacon in a non-stick pan so that it releases its fat . After that, remove it from the pan and cook the aubergines and cherry tomatoes in the same pan. Finally, continue as per the recipe.

Store this delicious first course in the refrigerator in an airtight container for 1-2 days.

Alternatively you can prepare the roasted aubergines in the microwave .
