Ingredients
For the cauliflower and tomato pasta
- Short pasta – 320 g
- Medium cauliflower – 1
- Tomato puree – 300 g
- Garlic – 1 clove
- Extra virgin olive oil – 2 tablespoons
- Fine salt – to taste
- Pepper – to taste
- Grated parmesan (optional) – to taste
Preparation
How to prepare the pasta recipe with cauliflower and tomato
First, cook the pasta in plenty of salted water.
In the meantime, remove the cauliflower florets and wash them well under running water. Then cut them into rather small pieces so that cooking is quick.
In a pan, heat the oil with the garlic clove, then add the cauliflower and cook for a couple of minutes over a high heat. Continue cooking for 10 minutes, adding one or two ladles of pasta cooking water. Season with salt and pepper .
Pour in the tomato puree and continue cooking for another 5 minutes.
Once the pasta is cooked, drain it and sauté it in the pan with the sauce. Divide onto plates and top with grated cheese if desired.

The tastiest variant of pasta with cauliflower and tomato
As mentioned in the introduction, you can add a spoonful of sliced ​​black olives together with the cauliflower or melt 3-4 anchovy fillets together with the oil. To prepare a tastier condiment such as cauliflower ragù, prepare a classic sauté with celery, carrot and onion, brown it in oil then add the cauliflower, proceeding as per the recipe.

Conservation
The pasta with cauliflower can be kept in the refrigerator for 2-3 days, well covered in cling film. You can heat it either in a pan or in the microwave.
