Pasta with confit cherry tomatoes and crunchy breading

Pasta with confit cherry tomatoes, enriched with a delicious breading prepared with anchovies and breadcrumbs, is a first course that is as simple as it is good and full of flavour. The ingredients are very simple but the cherry tomatoes are enhanced thanks to cooking in the oven and the combination of toasted breadcrumbs completes everything with an irresistible flavor note.

Preparation of pasta with confit tomatoes
- First, dedicate yourself to the preparation of the confit tomatoes: wash the tomatoes, dry them and cut them in half .
- Separately, chop the garlic, add the aromatic herbs and mix.
- Distribute the cherry tomatoes on a baking tray lined with baking paper, keeping them cut side up.
- Sprinkle them with the aromatic mixture then sprinkle with salt and pepper and 1 or 2 tablespoons of sugar .
- Finish with a drizzle of oil on the vegetables and start cooking.
- Bake in a preheated oven at 140°C and cook for 90 minutes.
- Meanwhile, heat a drizzle of olive oil in a large pan and add the breadcrumbs, let it brown for a few minutes then set it aside.
- Meanwhile, cook the pasta in plenty of salted water.
- Drain the pasta and season it with the confit cherry tomatoes and sprinkle with the toasted breadcrumbs , enjoy your meal! You can also add a handful of grated cheese if you like.
storage
We recommend consuming the pasta at the moment, when it's still hot. You can keep it for up to 1 day in the fridge , in a special container with a lid. We do not recommend freezing in the freezer.
