Pasta with radishes
Simple and prepared using all parts of this vegetable, pasta with radishes is good both hot and cold.
We realize how unusual this first course may sound and yet trust us: pasta with radishes is delicious. Of course, it can be prepared in different ways, but today we will reveal how to make it using all the parts of this beautiful (and economical) vegetable.
In fact, we used radish leaves to make a delicious pesto while the roots, sliced thinly, are perfect for adding crunchiness. Good both hot and cold , it can also be enriched with cherry tomatoes to transform it into a pasta salad.
How to prepare the pasta with radishes recipe
- First, cook the pasta in plenty of salted water for the time indicated on the package.
- In the meantime , clean the radishes by removing the leaves and roots. The latter should be thrown away while the leaves should be rinsed well under running water and then dried with kitchen paper.
- Transfer them to the bowl of the immersion blender together with the almonds, parmesan, garlic and a pinch of salt and start blending, adding oil little by little. You will have to obtain the characteristic consistency of pesto.
- Also wash the radishes and cut them into 2 mm thick slices using a sharp knife or a mandolin.
- Once the pasta is ready, drain it and transfer it to a salad bowl where you will season it with the pesto and radishes. Then distribute on plates and serve.
You can also make a sort of pasta salad with radishes by cooling the pasta under running water while you drain it and adding about 200 g of cherry tomatoes cut in half . After a couple of hours in the fridge it will be delicious!

storage
The pasta with radishes will keep in the refrigerator for up to 3 days . If you have already added the radishes we recommend enjoying it at room temperature.
