How to prepare the recipe for pasta with ricotta

  1. First, cook the pasta in abundant salted water for the time indicated on the package.
  2. Then transfer the ricotta, without draining it, into a bowl and work it into a cream with a spoon. Scent it with the grated rind of the lemon and season with a grind of black pepper and a pinch of salt. Adjust the consistency of the cream with a little cooking water or with a few tablespoons of milk.
  3. Once the pasta is ready, drain it and mix it with the ricotta. Spread over the plates and complete with a sprinkling of grated Parmesan cheese.
