Peasant style pork chops

The peasant pork chops have the aromas of Mediterranean cuisine and the sauce that accompanies them is perfect for an inviting slipper.

Farmer-style pork chops with olives and cherry tomatoes are very easy to prepare, but above all incredibly fragrant and tasty. The aromatic herbs give a unique aroma and the tomato helps create a delicious sauce.

The most important aspect concerns the cooking of the chops : when turning them, never pierce the meat otherwise it will lose its juices, compromising its softness. Secondly, don't overcook . For finger-thick bone-in chops, 2-3 minutes per side will be enough. Alternatively you can measure the core temperature with a kitchen thermometer: it should be 65°C.

First, chop the sage and rosemary with a knife and remove the peel from the garlic . Heat the oil in a pan and brown the herbs over a low heat for 3-4 minutes, without letting them burn.

In the meantime, score the chops all around so that they do not curl during cooking, then dredge them in the flour , pressing well and then shaking to remove the excess. Brown them in oil for a minute on each side.

Remove the garlic clove, add the cherry tomatoes cut in half and the olives and continue cooking for a maximum of 8 minutes, turning them occasionally. Season with salt and serve hot with a side dish of your choice.

Simpler but equally tasty are pan-fried pork chops , perfect when you don't know what to cook for dinner and don't have many ingredients available.

Conservation

The chops will keep in the refrigerator for a couple of days. Reheat them in a pan before bringing them to the table.
