It is a sort of tomato and cream pasta enriched with cooked ham and sautéed onion. In short, nothing too complicated: a simple sauce that is prepared while the pasta is cooking. It is customary to prepare penne al baffo because with their shape they lend themselves well to collecting both the creamiest part of the sauce and the chunks of ham but you can use the shape you prefer to obtain an exquisite pasta al baffo.

How to prepare penne al mustache

  1. First, cook the pasta in plenty of salted water for the time indicated on the package. We have chosen pennette, but penne, fusilli and rigatoni are also perfect.
  2. On the side, finely chop the onion and brown it in a pan with a pinch of salt until it is tender and transparent.
  3. Then add the diced cooked ham and, after a couple of minutes, the tomato puree .
  4. Cook over medium heat, so that it barely boils, and let it reduce. Remember to adjust the salt at this stage.
  5. Just before draining the pasta, add the cream to the sauce, mixing well.
  6. Drain the pasta well and toss it in the pan for a few minutes, just long enough for the flavors to blend.
  7. Distributed on plates and completed as desired with a sprinkling of parsley , useful for giving a note of freshness.
  8. Serve the pennette al mustache piping hot, completing as desired with a sprinkling of Parmesan cheese .

storage

Penne al baffo can be kept in the refrigerator for up to 2-3 days and is excellent heated in a pan. If you wish, you can also keep only the tomato and ham sauce in an airtight container, so that you have it available when needed. Also in this case the maximum time is a couple of days in the refrigerator, while you can keep it in the freezer for up to 3 months.
