Pepper meatballs
Pepper meatballs are a delicious recipe to add flavor and color to the table, an original idea that you will all love.
Pepper meatballs are an alternative to classic meatballs, with a strong and tasty flavour. The ingredients are the same as stuffed peppers but the winning point of our recipe is the crunchiness and lightness thanks also to cooking in the oven. We will make the meatballs without meat, but mainly only with stale bread and vegetables : we wanted to choose both red and yellow peppers to give a more intense and varied flavour.
Their versatility will prove perfect for an appetizer, an aperitif or even an alternative second course! In short, the important thing is not when to eat… but what to eat!
Preparing the pepper meatballs recipe
- Wash and clean the peppers, removing the stem, seeds and filaments. Cut them into strips and then into small pieces .
- Heat the garlic in a pan with a drizzle of oil and add the peppers. Add salt, pepper and cook over medium heat for 15-20 minutes .
- Take a large bowl and soak the bread in water .
- Squeeze it and transfer it to another bowl together with an egg, peppers, chopped parsley, parmesan, salt and pepper.
- Mix with your hands until you obtain a homogeneous and well-blended mixture .
- Make the shape of the meatballs, pass them in a tray with the flour, then in the remaining two beaten eggs and finally in the breadcrumbs. You will have obtained a breading that will become super crunchy in the oven.
- Place the meatballs on a baking tray lined with baking paper, sprinkle them with a drizzle of oil and cook in a preheated oven at 200°C for about 15 minutes .
- Remove the hot meatballs from the oven and bring them to the table… how delicious!
Variations and tips for pepper meatballs
- Anyone who wants can replace the stale bread with boiled and mashed potatoes , so as to obtain super soft pepper and potato balls inside.
- Frying will always have its charm. Even if our recipe called for cooking in the oven, you can still make pan-fried pepper balls by cooking them in hot oil until golden brown.
- If you like, enrich the dough with olives, capers and onion!
Conservation
Store your meatballs in the refrigerator for 2 days in an airtight container.
