The pepper omelette is a very simple second course to make. This is a recipe suitable for the summer period and can also be served cold . The starting preparation is the usual one for any omelette: based on eggs, cheese and little else. The seasoning that gives that extra touch to this preparation is the peppers.

You can use all varieties of peppers to make this recipe tasty, whether yellow, red or green. The preparation was born as a second course, but you can also serve it as an appetizer, if you have guests at home, presented in small pieces. In a few minutes you can switch to pan cooking and, for an even lighter product, you can use oven or air fryer cooking.

Preparing the recipe for the pepper omelette

  1. To begin, wash the peppers under running water and dry them.
  2. Cut them in half , remove the stem and clean the inside; then, cut the pulp into strips .
  3. Take a pan with a non-stick bottom and pour a drizzle of oil.
  4. Add the garlic clove and fry until golden.
  5. Next, remove the garlic and place the peppers in the pan; Season with salt and cook over low heat for 15 minutes .
  6. While they cook, stir occasionally.
  7. In the meantime, shell the eggs in a bowl; beat them lightly with a hand whisk.
  8. Add the grated cheese, a pinch of pepper and salt and mix vigorously.
  9. Once the peppers are ready, turn off and let them cool.
  10. Pour the cooked peppers into the egg batter and stir to combine.
  11. In the pan used previously, pour a drizzle of oil and add the dough.
  12. Cook for 5 minutes over low heat ; when it's time, turn the omelette and cook the other side for 3-4 minutes. Alternatively, you can pour the omelette into a pan and cook it in the oven at 180°C for 15/20 minutes .

Conservation

The omelette with peppers is light and delicious, good to serve at any time. You can store it for 1-2 days in the fridge , in an airtight container.
