This typical Southern Italian dish does not have just one recipe and Puglia and Sicily are competing for its paternity . The starting ingredients are more or less always the same but the aromas change from time to time, allowing you to always obtain a different recipe.
What really cannot be missing when talking about stuffed peppers with breadcrumbs is bread , preferably homemade and crumbled with your hands. To this, garlic and parsley are almost always added and then, depending on the recipes, capers, anchovies, tomatoes and parmesan . How to prepare the recipe for peppers stuffed with bread
- First, crumble the breadcrumbs into a bowl.
- Finely chop the garlic and parsley and add them.
- Chop the anchovies (omit them for a vegetarian version) and the capers and mix them with the previous mixture, also adding a pinch of salt .
- Knead the breadcrumbs with your hands after adding half a glass of water (this is used to make the mixture moist without using too much oil).
- Wash the peppers , remove the cap (or divide them in two lengthwise if you use the square ones) and remove the central part with the seeds and white filaments.
- Fill them with the mixture obtained by pressing with the handle of a wooden spoon so that they are nice and full and place them in a lightly oiled baking dish. Prick the surface with a toothpick.
- Cook at 200°C for 40 minutes , leaving them to cool before serving.

This recipe lends itself to many variations. There are those who add cherry tomatoes cut into quarters to the filling ( 100 grams will be enough), those who prefer other aromas such as basil or oregano to parsley. The green light is also given to replacing the parmesan with pecorino as well as adding diced cheese to the fillings.

Conservation
Stuffed peppers can be stored in the refrigerator for 2-3 days in an airtight container. You can consume them at room temperature or reheated in the oven, microwave or in a pan with the lid.
