Persimmon and chocolate cake
Moist beyond belief, persimmon and chocolate cake is perfect for breakfast or a snack. Here is our recipe.
The arrival of autumn is marked by the appearance of some of the most delicious and sweet fruits ever: persimmons. With their bright orange color and natural sweetness , they are perfect for use in many recipes. Among the many we have tried is this persimmon and chocolate cake with a moist, almost creamy consistency .
Using ripe persimmons allowed us to reduce the sugar and butter content . The result is a light cake, perfect for breakfast or a substantial snack. In fact, let's not forget that persimmons are very energetic due to the natural supply of sugars and fibre. But let's see all the steps to make it happen.
How to prepare the persimmon and chocolate cake recipe
- First, remove the stem and peel from the persimmons and blend them with an immersion blender to obtain a puree.
- In a bowl, combine the sifted flour with the bitter cocoa and the yeast . Add the eggs and first incorporate the persimmon puree then the seed oil . You can mix with a hand whisk or electric whisk. Furthermore, if you have a mixer with a rather large container you can mix everything inside.
- Chop the chocolate with a knife (or use the drops) and add it to the mixture, mixing with a spatula.
- Pour the mixture into a 24cm diameter baking pan lined with baking paper or buttered and floured.
- Cook at 180°C for an hour , testing with a toothpick before taking out: if inserted in the center it should come out dry. Once cold, finish with a sprinkling of icing sugar if desired.

Conservation
