Piedmontese hazelnut cake
Flourless hazelnut cake is a typical dessert from Piedmont, easy to prepare and ideal to serve at the end of a meal with coffee.
Piedmont is an Italian region with a great culinary tradition behind it, especially with regards to sweets and desserts. Today we are going to the Langhe, the area where the hazelnut cake is prepared, a recipe that varies from valley to valley but which represents the traditional dessert of Cortemilla , a small town in the province of Cuneo.
Today we are going to prepare a hazelnut cake without flour, using the round gentle hazelnut from the Langhe or Nocciola Piemonte PGI , a fantastic product with a delicate and aromatic flavour.

Preparation
How to prepare the flourless hazelnut cake recipe
First make sure you have toasted hazelnuts without skin . Otherwise you can toast them yourself following our guide .
Transfer them to a blender and blend them until they become flour. In this case, if your mixer is not very powerful, in addition to blending intermittently to prevent the mixture from heating up and starting to release oil, you can add a spoonful of sugar taken from the total.
Break the eggs and separate the whites from the yolks . Work the latter with the sugar until they are light and fluffy. Then add the flour and, if there are no intolerances, also the yeast , keeping in mind that it is optional and only serves to stabilize the dessert.
Whip the egg whites until stiff and add them to the previous mixture, mixing delicately from bottom to top to avoid dismantling it.
Transfer to a 20-22 cm diameter baking pan lined with baking paper and cook at 180°C for 35 minutes , testing with a toothpick before removing from the oven.
Once cold, remove it from the mold and serve, decorating with a sprinkling of icing sugar.

Conservation
